Green Beans with Crispy Bacon

Ingredients
1 lb fresh green beans
4 slices bacon
2 Tbs unsalted butter
1 cup white button mushrooms, sliced
1/2 tsp salt
1/4 tsp black pepper
1/4 cup feta cheese crumbles
Directions
- Bring a large pot of water to a boil. Fill a large bowl halfway with ice water. Place the beans in the boiling water. Cook for 3 minutes to soften. Remove from the pot, and place in the ice water to cool. Strain water after cooling, and pat dry.
- Cook the bacon in a large skillet. When bacon is crispy, remove from pan. Set aside. Let the bacon cool. Once cooled, finely chop the bacon. In the same pan, add the butter. Melt butter over medium heat. Add mushrooms. Cook until softened. Add green beans. Sauté for 4 to 5 more minutes until all liquid released from mushrooms and beans has evaporated. Add the bacon back to the pan. Season with salt and pepper. Transfer to a serving dish. Top with feta cheese.
